So, this really is the last holiday treat I have to share, I think. I have some other yummy recipes to share, but I will wait until after Christmas to share those.
I was at a Christmas party the other night and there was this huge bowl of popcorn on the table. I thought, that looks good I will try just a handful. Then I kept hearing myself saying over and over again, "I have got to get away from this popcorn, this really is my last handful." Despite my words, I just could not step away. I think I might have eaten half of the bowl by myself.
So, of course, I had to make it for myself and wanted to share the recipe with you. This is easy and sooooo delicious!
White Chocolate Peppermint Popcorn
What you need:
1 box of candy canes (10-12 candy canes)
2 bags of popped popcorn
24 oz white chocolate
1 tsp peppermint extract
Unwrapping the candy canes is the most time consuming step!
Put the candy cane in the food processor and
crush finely. Pop two bags of popcorn and put in a bowl that is large enough to be able to mix the popcorn.
Sprinkle the crushed candy canes over the popcorn.
Next, melt your white chocolate. I used white chocolate chips and melted them the same way I melt chocolate chips. Put all chips in a microwave safe, glass bowl. Microwave on high for 1 minute. Take out and stir.
Then put back in for 30 seconds and stir. Continue until all morsels are melted.
Add 1 tsp of peppermint extract. The instant I opened the peppermint extract bottle I was in heaven. I just love the smell of peppermint, in small doses. Half of the bottle on your kitchen counter does not smell so great! So, be careful there are no little hands around your peppermint extract. And if they are make sure they are very careful little hands!
Pour the white chocolate on the popcorn.
Then stir and stir and stir until all the popcorn is coated with chocolate and candy canes.
Spread the popcorn out on parchment paper until it hardens.
Break apart the popcorn and it is ready to eat!
Or ready to wrap up and give away.
I had to give all of ours away or I would have eaten it all! Thank goodness Miller does not know how to work the camera or he could have snapped a picture of me licking the parchment paper to make sure none of the crumbs escaped (ok, so I did not really lick the paper clean, but I did not leave much behind). Instead, I will just let Miller look like the guilty one:)
